Sparkling Toffee Cookies

(makes approximately 3 dozen)

Ingredients:

1 ½ sticks (3/4 cup) unsalted butter, softened (not melted)

1 cup white sugar

1 large egg

1 teaspoon vanilla

 2 cups all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon baking soda

Pinch of salt

½ cup toffee bits

Sparkle, colored, or regular sugar (optional)

Directions:

  1. Heat oven to 350 degrees F.
  2. Combine sugar, butter, egg, and vanilla in large mixing bowl. Beat at medium speed, scraping as needed, until creamy (1-2 minutes).
  3. Add flour, baking powder, baking soda, and salt.
  4. Reduce beating speed to low and mix until combined (1-2 minutes).
  5. Mix in toffee bits.
  6. Shape dough into 1-inch balls. Roll in sparkle sugar, colored sugar, or regular sugar.
  7. Place on ungreased cookie sheet and flatten with bottom of glass or cookie stamp. If dough sticks to glass or stamp, dip it first in sugar)
  8. Bake 9-11 minutes or until edges are light brown. The cookie should be mostly pale. Sprinkle with extra sugar while warm if desired. Cool.

In days past, castle kitchens were sometimes built as separate buildings in an attempt to protect the living quarters from potential cooking fires. It was also helpful when the walls were made of stone.
