Sparkling Toffee Cookies
Ingredients:
(makes approximately 3 dozen)
1 ½ sticks (3/4 cup) unsalted butter, softened (not melted)
1 cup white sugar
1 large egg
1 teaspoon vanilla
2 cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
Pinch of salt
½ cup toffee bits
Sparkle, colored, or regular sugar (optional)
Directions:
- Heat oven to 350 degrees F.
- Combine sugar, butter, egg, and vanilla in large mixing bowl. Beat at medium speed, scraping as needed, until creamy (1-2 minutes).
- Add flour, baking powder, baking soda, and salt.
- Reduce beating speed to low and mix until combined (1-2 minutes).
- Mix in toffee bits.
- Shape dough into 1-inch balls. Roll in sparkle sugar, colored sugar, or regular sugar.
- Place on ungreased cookie sheet and flatten with bottom of glass or cookie stamp. If dough sticks to glass or stamp, dip it first in sugar)
- Bake 9-11 minutes or until edges are light brown. The cookie should be mostly pale. Sprinkle with extra sugar while warm if desired. Cool.
